风车粉（因为当初进口的是风车牌，所以厨师就叫成风车粉了。 这种粉的用途就很广了， 除了上面说过代替了马蹄粉来做蟹黄鱼翅以外，做卤面，及大部份大型酒楼餐厅，都乐于用来勾芡，因为不会变水。 除此外也可用来做做粉浆炸食品。
